I am using Beyond and I just use I form I made in Microsoft Word. You could try checking out Donna Young's website, she has a lot of great planners there. Here is a link to her site.

I am a "chunker" too. It works well for us because my dd likes to lay under the table when I read to her. I find it hard to get her back to the table when I am done, so I save all read-alouds for the end of school. HTH!

I am doing Beyond with my 6 y/o dd. We normally start between 8:30am and 9am and are finished between 10am and 10:30am. What a blessing to be there to see that moment. My dd is in 1st grade and her reading skills have just taken off in the last few weeks. I am so thankful that God allowed me to be the one to teach her to read.
